Partners in marriage and gin, Catherine Crothers and Gary Jago, both have a keen interest in all things botanical and love making their favourite, very pure and exciting spirit. They have been on Jack’s Springs Farm for over 8 years and it is now home to Big Tree Distillery. They both have a lot of fun making the many variations to flavours and enjoy playing around with the botanicals, many of which are farm grown.
They currently source their juniper from overseas but hope to one day grow 100% at Jack’s Springs Farm. They have over 60 trees planted and some are already producing the juniper cone in their idillic surrounds in the beautiful region of the Macedon Ranges in Victoria.
“Beryl” is a 300 litre copper pot still made by Tassie company Lapp Knewer. Neutral grain spirit is used along with a mix of fresh and dried botanicals that are either imported, locally foraged or farm grown. One special ingredient to their gins is country-pure rain water and spring water from the farm.
