“High Spirits”

The Granite Belt is the premier wine region in Queensland and Castle Glen’s distillery is located way up – at least in Australian terms – at 934m above sea level, the highest altitude in Queensland.  With their customers drinking more and more cocktails, the answer was to add to their winery by starting a distillery to produce the full range of the spirits required.  Gin is the premier cocktail spirit so it’s production was essential.

Castle Glen was first established in 1990 by Cedric and Carol-Anne Millar as a winery and has since gone on to produce chemical and preservative free table wines, sparkling wines, fortified wines, liqueurs, beer and spirits including Single Malt Whiskey.

Distillation of spirits began in 2009 and was driven by customers’ demands for cocktail ingredients, of which gin is essential. Also, Carol-Anne’s grandmother lived in the UK and lived by a daily 4pm gin o’clock and her 90-year old mother and father both enjoy a gin every afternoon in NZ, thus it was a family tradition handed down through the generations and just had to continue.

Castle Glen thus became one of the first producers of gin in the current boom. Cedric looks after operations and Carol-Anne oversees the admin and cellar doors at both Tamborine Mountain on the Gold Coast hinterland and Montville on the Sunshine Coast hinterland.

Methodology

Castle Glen ferment their dried juniper berries, double distill, macerate and then filter. The still is 450L, stainless steel and sustainably solar powered. Botanicals used include a hint of liquorice.
