“Kale You Can Drink”

We tried to discover the origin of the name of this distillery. There was mention of a bearded distiller, a nick name, cute teddy bears and the hint of something mysterious. The only way you are going to know for sure would be to visit the cellar door and see if they are more forthcoming. Whatever the origin the images on the bottles are very cute and proving very popular.

Damien and Amanda Anderson are the founders of Tiny Bear. Damien spent 8 years as a high school chemistry teacher before they decided to sell their home and “go all in” for gin. Damien is using an understanding of the science behind fermentation and distillation in order to produce the best gin possible. Days are spent distilling, washing fermenters, bottling and talking all things gin. Amanda is the solid rock of the distillery. By day a mild-mannered high school biology and wellbeing teacher, by night she manages marketing, social media and making sure things have “flow”. Oh, and then there’s Mavie Anderson the distillery dog, relaxation expert and Sir Bark-a-Lot.

Methodology

When creating their gin, Tiny Bear first create their own clean and crisp spirit. They don’t use any old grain or grape spirit, but ferment their own kale with sugar, water and yeast to produce what is, in effect, a kale wine. This wine is then run through a 200L 6-plate column still – custom made in Ballarat – to create a high proof neutral spirit, which is then run through the still a second time. During this stage, the vapour passes through a botanical basket, infusing all the different flavours it contains.
